A good dinner
Recently a friend asked me about what I eat for dinner since I live alone. My mom is a nutritionist and I learned a thing or two about healthy eating from her. This was my dinner on Sunday - a chef's salad: Dark red leaf lettuce, 1 hardboiled egg, a ripe tomato, hazlenuts, salt pepper and some balsamic vinegar. Fast, easy, filling and healthy. Of course the most important part is how it's served (to me anyway) -this is my 'orleans' pattern -by haviland limoge - around the rim are different birds and a beautiful blue pattern. It makes even the simplest meal special! What is a fast easy dinner for you when you're alone?
I like your salad esp with the addition of the hazelnuts. I usually put on some fresh shrimp on mine, now I will add some hazelnuts!
ReplyDeleteHazelnuts are great -so yummy AND they have the most fiber of any nuts. I have the same thing for lunch today! Shrimp is a good idea, I'll have to try that soon!
ReplyDeleteI have been making batches of gazpacho from fresh veggies from the farmers' market. i make it up on sunday and then have it for dinner for the rest of the week. delish!!!

ReplyDeleteWe keep salad mix, chopped vegetables, and grilled chicken in the fridge most of the time for salads during the week. Works well for dinner together or alone, depending on schedules.
ReplyDeleteYummy, summer is a great time of year to eat salads, I love buying local tomatoes from the farmers market.
ReplyDeleteI think tomatoes are my favorite food! I havne't been to the farmer's market in awhile but the ones from whole foods are usually pretty good!
